Fruit Pizza Cups


Start by preheating your oven and preparing a mini muffin pan with cooking spray. Take pre-made sugar cookie dough and cut it into cubes. Place one cube in each muffin cup and bake according to the package directions.


Once baked, use a spoon or a shot glass to gently press down in the center of each cookie to form a cup shape. Allow the cookies to cool in the pan. For a quick chill, you can place them in the freezer for about ten minutes.


Meanwhile, in a separate bowl, combine 1 block of softened cream cheese, 2 tablespoons of softened butter, 1 1/4 cups of powdered sugar, and 1 teaspoon of vanilla extract. Mix until smooth and creamy, then refrigerate the icing until ready to use.


Remove the cookie cups from the pan and fill each cup with the prepared icing. Top with chopped fruit of your choice.
